As someone who cares deeply about the earth, It hurts seeing the food industry being one of the biggest influences on climate change. The desire to cook with ingredients that are found 1,000+ miles from where your kitchen is mind boggling.

As a chef, one of the first things you develop is a sense for the environment around you. Chefs are like cats, our curiosity sometimes gets the better of us… But when we rely solely on the ingredients surrounding, that’s when creativity is your main weapon.

It’s not to say you shouldn’t go out and spend your hard earned money on wagyu, bluefin tuna, or huetlacoche… When we look for food to cook, the search should always begin from what is closest to you.
